2. Sherbet Investigation

































We are so overwhelmed by all the support and love everybody has shown us during the competition. We would like to thank CQU weekly for writing an amazing article on our world-class sherbet.

After much debate, we have decided to make the details of our experiment and competition "world-class sherbet"  public.

Materials

  • icing sugar
  • sugar
  • bi-carb soda
  • jelly crystals (flavour of preference)
  • citric acid
  • tartaric acid

Trial and error


Trial One
Ingredients
·      2 parts sugar
·      1.5 parts icing sugar
·      1 part bi-card soda

·      5 parts jelly crystals
·      2 parts citric acid
·      2 parts tartaric acid

Critique
Too sour, add more sugar and jelly crystals

Trial Two
Ingredients
·      3 parts sugar
·      3 parts icing sugar
·      1 part bi-card soda
·      6 parts jelly crystals
·      2 parts citric acid
·      2 parts tartaric acid

Critique
Still too sour, less bi-carb

Trial Three
Ingredients
·      3 parts icing sugar
·      3 parts sugar
·      0.5 parts bi-carb

·      6 parts jelly crystals
·      2 parts tartaric acid
·      2 parts citric acid

Critique
Too acidic, less tartaric acid



Trial Four
Ingredients
·      3 parts icing sugar
·      3 parts sugar
·      0.5 bi-carb soda

·      6 parts jelly crystals
·      1 parts tartaric acid
·      2 parts citric acid
Critique
Best by far – could be sweeter/more sour to suit pallet



Final Portions 
Ingredients
·      1.5 tsp. icing sugar
·      1.5 tsp. sugar
·      0.25 tsp. bi-carb soda

·      3 tsp. jelly crystals
·      0.5 tsp. tartaric acid
·      1 tsp. citric acid

Formed from the outstanding results of Trial Four

Rating Guide
1 – disgusting, yuck
2 – just bearable, barely eatable
3 – ok, edible, wouldn’t buy it
4 – pretty good, not perfect
5 – yummy, want to take it home and eat more
